I need suggestions for dinner tonight, my turn to cook again. We had Shepherds Pie last night so that's out. I have to go to the store anyways, so this is fairly open.

EVP... I'm also making a Ginger/Soy marinated chicken with a Raspberry Sesame sauce...
Soy and Ginger Marinade:
1/4 cup Worcestershire sauce
1/4 cup mirin
1/2 cup soy sauce
1-inch piece ginger, thinly sliced, smashed
2 tablespoons ketchup
1/4 cup chopped garlic
1/4 cup chopped shallots
1/2 cup honey
1/2 cup pomegranate juice
2 tablespoons lemon juice
2 tablespoons chile paste
2 teaspoons ground black pepper
You can substitute cranberry for pomegranate juice.
Marinate the chicken for at least 30 minutes, I usually pull an hour to two. You'll need that for the rest of the stuff.
I typically use Jasmie rice, and cook it, add no butter or anything. Cooked correctly, it's slightly sticky.
Get some sesame seeds, roast them in a pan that's very lightly buttered. Cover the bottom of a medium sized pan. Split the seeds into 30/70... where you're going to fluff the rice while adding the seeds.
The rest will go to the Raspberry/Sesame sauce.
Raspberry Sesame Sauce:
1/2 cup sweet red wine
1/2 to 1 cup raspberry jam/preserves
4 tablespoons soy sauce
2 tablespoons honey
1 teaspoon Dijon mustard
dash pepper
Heat all of the above ingredients in the same pan as the sesame seeds, bring to a slight boil... allow to cool, remove from the eye.
By now, take your chicken, thinly slice the chicken and bake it, or pan fry it. Up to you. I tend to pan-fry for brevity, then pat dry in a plate - removing oil - and then introduce some of the sauce to coat lightly. Do not add to sauce. Keep separate.
Serve chicken on top of rice, pour sauce on side.
Steam some fresh vegetables, miso soup is the start of the "feast"... enjoy with junmai sake.
The sauce... I'll warn you. I might be missing some components... I tend to "wing it" when I make it. Never wrote this recipe down until now.
And I swear I'm missing somethings.
